RAW CAULIFLOWER DETOX SALAD

Use this recipe as an inspirational guideline. I invite you to get creative, experiment, try new ingredients and different combos. If you don't have/like something, swap it out with something else. Taste as you go along. Trust your tastebuds and your gut...and most importantly, have fun!

This salad was one of the ways I healed myself back to health after chemotherapy.
After my breast cancer treatment, I did a 3 month raw vegan detox which involved juicing and incredible super salads like this one! You can find out more about my breast cancer journey HERE.
Cauliflower Rice is the hero of this salad. It's basically my version of a "cauliflower tabouleh.'
You can keep it in the fridge for 2-3 days and what's great about that is that you don't have to worry about what to cook and eat so you can solely focus on healing and detoxifying.
Eating the same salad for 2 days straight might sound like torture, but you can add different toppings and dressings every time to keep things interesting.
I like to add any of the following to mix things up a bit...(my favourite is adding chimichurri and avo):
Avocado
Sauerkraut
Kimchi
Sprouts
RAW CAULIFLOWER DETOX SALAD
Instructions
Prepare the salad in a big salad/mixing bowl or a big enough airtight container (that has a lid), so you can store it in the fridge.
Cut the cauliflower into smaller pieces or florets and place them in the food processor. Depending on the size of your food processer, you might have to do this in two parts. Pulse until it's the right size and consistency and add it to the salad bowl.
Add in the chopped kale and mix thoroughly with the cauliflower rice.
Add the rest of the ingredients.
If you're planning on enjoying the salad for 2 - 3 days, DO NOT ADD salt, olive oil or dressings. Instead, you can dress and season your salad once you've dished up.
