COCONUT GRANOLA

Use this recipe as an inspirational guideline. I invite you to get creative, experiment, try new ingredients and different combos. If you don't have/like something, swap it out with something else. Taste as you go along. Trust your tastebuds and your gut...and most importantly, have fun!

Nothing beats the smell of roasty toasty granola coming out of the oven!


This is another one of my go-to recipes as it's super easy. You throw everything together and it's pretty hard to mess it up. You can also swap ingredients for something else like, e.g. Oats instead of Coconut Chips. Adjust the sweetness and saltiness to your preferences. 


TIP / Wait for the granola to cool down completely before you break it into clusters.


NOTE / Keep an eye on it while it's in the oven as each oven has it's own character and we don't want the granola to get too roasted. We're looking for a deep rich toasted look...if it's starting to lean to dark brown/black then take it out of the oven.

Ingredients

5 cups Coconut Chips / Whole Grain Oats


1 cup Pumpkin Seeds


1 cup Sunflower Seeds


1 cup Almond Slices


1/3 cup Flaxseed ( ground or whole )


1/3 cup Chia Seeds


1/4 cup Coconut Oil  ( 1/3 cup Coconut Oil if using Oats )


1/4 cup Honey ( Maple Syrup if Vegan ) - 1/3 cup if you like it sweet


1 tsp Sea Salt Flakes ( add a pinch more if you like sweet-salty )


2 tsp Cinnamon

Instructions

  1. Preheat the oven to 160°C. 

  2. Line the baking tray (roughly 30cm x 40cm) with baking paper. 

  3. Combine all the dry ingredients in a mixing bowl. 

  4. Add the coconut oil and honey and mix well until all the dry ingredients are coated. 

  5. Transfer the mixture to the baking tray. Spread evenly with a spatula and compress down slightly. 

  6. Bake for 30 - 40min until golden crispy (depending on your oven). 

  7. Remove from the oven and set aside to cool completely. 


VERY IMPORTANT: If you break the granola before it's cooled down completely it won't form clusters...so you'll have to try and resist the delicious smell! Don't worry, it's worth the wait! ;)
