THAI BROCCOLI AND PEA SOUP

VEGAN + VEGETARIAN / PACKED WITH GREEN GOODNESS / A QUICK + EASY HEALTHY DINNER. JUST THROW EVERYTHING IN THE POT, COOK, AND BLITS, TA-DA!

The secret ingredient is always love !

Use this recipe as an inspirational guideline. I invite you to get creative, experiment, try new ingredients and different combos. If you don't have/like something, swap it out with something else. Taste as you go along. Trust your tastebuds and your gut...and most importantly, have fun!

This is another one of our weekly staples. There's something so wholesome and nourishing about a good pot of soup! I like making a soup after the weekend when we've maybe overindulged a bit and I can feel my body needs a comforting soup hug! 


This soup is packed with greens and all my favourite Thai flavours. It's also super simple and quick to make. Just throw it all together and blitz. 


TIP 01 / Use Frozen Broccoli if that's easier, cheaper or faster. 


TIP 02 / If you want to add some more Green Goodness you can add a 2-3 handfuls of Baby Spinach or 1-2 cups of Frozen Spinach or even some Kale...all greens are welcome! ;)

THAI BROCCOLI AND PEA SOUP

Ingredients

Coconut Oil


1 Onion / chopped


2 Lemongrass stalks


2 Green Chilies / chopped


40g-50g fresh Ginger / minced or thinly sliced


1 big Broccoli head / roughly 500 - 700 grams / chopped into smaller florets


2 cups Frozen Peas


1 tsp Green Curry Paste / optional


1 Vegetable Stock Cube


500ml - 750ml hot Water


1 can Coconut Milk


1 cup Fresh Coriander - chopped


3 - 5 Kaffir Lime Leaves


1 Lime


Salt & Pepper

THAI BROCCOLI AND PEA SOUP

Instructions

  1. In a big pot, add the Coconut Oil, Onion, Lemongrass, Chili and Ginger and simmer until the Onion is going translucent.

  2. Dissolve the Vegetable Stock Cube in 500ml of hot Water.

  3. Add the Broccoli and Peas to the pot.

  4. Add the Stock Water.

  5. If you're using the Curry Paste, you can add that now. (Optional)

  6. Add the Coconut Milk.

  7. The liquid should almost cover the vegetables. You can add more water if you think it needs more liquid.

  8. Put the lid on and bring to a boil. Simmer for 10 - 15 minutes or until the Broccoli is cooked.

  9. Once cooked, remove from the heat and let it cool down slightly.

  10. Add the chopped Coriander.

  11. VERY IMPORTANT! Remove the Lemongrass Stalks before blending!

  12. Carefully blend the soup using a Hand Blender (or a regular blender).

  13. Return the pot to a low heat.

  14. If you're using Lime Leaves, add them to the soup. If you don't have Lime Leaves grate the zest of the Lime into the soup.

  15. Season to taste with Salt & Pepper.

  16. Serve with a squeeze of Lime and a sprinkle of Fresh Coriander.
