MISO MAPLE ROASTED CARROTS

Roasted carrots are one of my favourite things, especially when they've been roasted for a long time and they get all caramelised and crusty as they are here. The miso really takes it to a different level! The sweet-salty caramelised umami flavours will make you want to finish the whole tray by yourself!

Ingredients

1 kg organic Carrots


1/3 cup Olive Oil


2 Tbsp Brown Miso Paste


1 Tbsp Soy Sauce / Tamari


1 Tbsp Maple Syrup / Honey 

MISO MAPLE ROASTED CARROTS

Instructions

  1. Preheat the oven to 180°C

  2. Wash, scrub or peel your carrots. Make sure they're dry before you place them on the baking tray.

  3. Place the carrots on a baking tray lined with foil (the foil is better to crisp them up when things get saucy)

  4. Drizzle with a bit of Olive Oil and a sprinkle of salt and spread evenly.

  5. Cover with foil and roast for 30 minutes - set a timer.

  6. While the carrots are in the oven, prepare the miso dressing in a small bowl/cup. Combine the oil, miso, soy and maple syrup and mix well. Check if you're happy with the consistency (thick and sticky but still runny) and the taste (salty-sweet). 

  7. After 30min, remove the foil that's covering the carrots. 

  8. With a tablespoon, drizzle about a 1/3 of the dressing over the carrots and put the tray back in the oven (uncovered) to roast for 15 minutes - set a timer.

  9. After 15min, remove the tray from the oven and turn the carrots. Add some more of the dressing, about a 1/3 and pop it back in. The carrots should be getting a bit of caramelisation going on by now, if not, you can crank up the heat a bit. Roast for another 15min - set a timer.

  10. Repeat the previous step. Things should be starting to look and smell really good. You'll notice it's the bottom bits that caramelise so that's why it's important to turn it every now and then so you get crispiness all around. Keep an eye on the prize to make sure they don't burn...the sauce on the bottom of the foil might get a bit burnt, but that's ok.

  11. Remove the tray from the oven when you're happy with the way it looks ;)
