BEST BAKED BEANS

When I say "baked beans", you immediately think of the canned version which is submerged in that overly processed tomato sauce, right?...well, I'm about to change that for you and, if like me, you don't usually eat canned baked beans then this might just become your new favourite!
Just so you know, there's nothing "baked" about these beans. I make it in the pan, and therefore, it's pretty quick and simple to whip up.
If you've read my article, 8 Ways to make cooking easier and faster, then you'll know I like to use store-bought spice blends and pantry staples to help speed up the cooking process. One of my favourite spice blends is This Chipotle Chilli Seasoning...it's so good!
For this recipe I like to use canned butter beans and cannellini beans, but you're welcome to use two of the same beans if you prefer.
These beans are deliciously moreish and smothered in tangy chipotle sauce. Enjoy it with:
good fresh wholewheat or wholegrain bread like sourdough or protein bread
grilled portobello mushrooms
veggie sausages
mash potatoes
BEST BAKED BEANS
Ingredients
a drizzle of Olive Oil / for the pan
1 Onion / sliced half rings
1 clove Garlic / minced or finely chopped
250g Cherry Tomatoes / halved
1 tsp Chipotle Seasoning / add more to taste
1 tsp Paprika / use Smoked Paprika if you don't have Chipotle
1 tsp ground Coriander
1 can Cannellini Beans / add the whole can, brine and beans
1 can Butter Beans
1 Tbsp Balsamic Vinegar
2 tsp Worcestershire Sauce
roughly 1 - 2 Tbsp Tomato Puree
Salt + Pepper / to taste
Instructions
In a pan, roughly 30cm wide, start heating up the oil and sauté the onions.
Once they start to go translucent, add the garlic and the cherry tomatoes.
Add the spices and stir them in.
Cook for a few minutes until the tomatoes have softened slightly making sure the ingredients and spices don't burn.
Add a can of beans (brine and all) to the pan.
Drain the second can of beans and add to the pan.
Add the balsamic vinegar, Worcestershire sauce and tomato puree and stir it all in.
Simmer for a few minutes until the sauce thickens to your desired consistency.
Season to taste and make sure the flavours are well balanced. It should be sweet, salty and tangy with a hum of smokiness from the chipotle.
