SUMMER ORZO SALAD

VEGETARIAN / GREAT FOR SUMMER BARBECUES AND WHEN YOU'RE ENTERTAINING FRIENDS / TASTY LEFTOVERS AND GOOD FOR PICNICS

The secret ingredient is always love !

Use this recipe as an inspirational guideline. I invite you to get creative, experiment, try new ingredients and different combos. If you don't have/like something, swap it out with something else. Taste as you go along. Trust your tastebuds and your gut...and most importantly, have fun!

Fresh and packed with flavour, this hearty summer orzo salad is a great dish for when you're having a barbeque or entertaining friends. It's just as tasty the next day, so it's perfect for leftovers, lunchboxes and picnics. 


It's served with a zingy lemon and mustard dressing, making this salad even more delicious and moreish!

SUMMER ORZO SALAD

Ingredients

250g uncooked Orzo - cooked


1 medium Red Onion - thinly sliced + sautéed


1 cup Petit Pois Peas - cooked


roughly 300g Zucchini - chopped + sautéed


100g Fine Green Beans - blanched


1/3 cup or 50g Pine Nuts - toasted


Feta - as much as you like


a big handful of Baby Spinach


FOR THE DRESSING

1/3 cup Olive Oil


1 tsp Apple Cider Vinegar


3 tsp Dijon Mustard


juice from 2 Lemons


1 tsp Agave or Maple Syrup


1 clove Garlic - minced


some fresh Mint - finely chopped


pinch of Salt

SUMMER ORZO SALAD

Instructions

  1. Prepare the Ingredients as instructed above.

  2. Once the Orzo is cooked and drained, transfer to a mixing bowl or serverware. You can add the other cooked ingredient / sauteed onions, peas, zucchini and green beans. Wait for the cooked ingredients to cool down before adding the fresh ingredients.

  3. Make the salad dressing by combining all the ingredients. Adjust the flavour if needed. It needs to taste nice and tangy. Pour it over the salad and give it a good mix

  4. Add the fresh ingredients. Have a taste and season if needed.

  5. Before serving, drizzle with a bit of olive oil if it looks dry.
