MY GO-TO MIXED SALAD / EASY + QUICK + HEALTHY

The secret ingredient is always love !

Use this recipe as an inspirational guideline. I invite you to get creative, experiment, try new ingredients and different combos. If you don't have/like something, swap it out with something else. Taste as you go along. Trust your tastebuds and your gut...and most importantly, have fun!

This salad is my go-to "whatever-is-in-the-fridge" salad, and that's cos my weekly groceries usually include these ingredients. 


When you have a selection of fresh ingredients available, then there's nothing stopping you from throwing together a delicious, colourful salad like this, and the best part is that it's quick to make. 


I left out the quantities for the ingredients as it's more of an inspiration for the combination of things, and you can improvise on the amounts depending on how big of a salad you're making.


Feel free to add whatever you have in the fridge; red peppers, broccoli, sautéed mushrooms, etc. 


I also like to add chickpeas, cannellini or butter beans for some extra body...so good!

Ingredients

Baby Spinach / or Rocket, Mixed Leaves...whichever you prefer


Cucumber


Cherry Tomatoes / halved or quarted


Red Cabbage / finely sliced


Carrot / grated


Avocado


Salt & Pepper


Dressing / Olive Oil + Balsamic Vinegar


a sprinkle of Seeds / Flax, Sunflower, Pumpkin Seeds / Optional
