BASIL PESTO ZOODLES

Use this recipe as an inspirational guideline. I invite you to get creative, experiment, try new ingredients and different combos. If you don't have/like something, swap it out with something else. Taste as you go along. Trust your tastebuds and your gut...and most importantly, have fun!

Fresh Zucchini Noodles (zoodles) are a great substitute for spaghetti, especially if you're trying to cut back on the carbs and add more veggies to your diet. 


I like to keep the zucchini noodles raw for this recipe. Once you dress it, they soften, and the pesto, lemon juice, and oil help take the edge off the rawness.


This dish is very simple, so it's essential for the flavours to be balanced and to season it properly...so taste, taste, taste!

In this recipe I used store-bought basil pesto, but of course, nothing beats fresh homemade basil pesto, so if you've got the ingredients and the time, it will taste even better!

BASIL PESTO ZOODLES

Ingredients

500g Zucchini / spiralised or noodles


roughly 1 cup frozen Petit Pois peas / blanched


1/4 cup Olive Oil


2 - 3 Tbsp Basil Pesto / add more if needed


1 Tbsp White Balsamic Vinegar / or Regular Balsamic Vinegar


juice of half a Lemon / add more if needed


Salt + Pepper / to tatse


Pea Shoots / optional


a sprinkle of Toasted Pinenuts


Feta / optional



BASIL PESTO ZOODLES

Instructions

  1. In a wide mixing or salad bowl, add the zucchini noodles and petit pois peas.

  2. In a small bowl, mix together the olive oil, basil pesto, balsamic vinegar and lemon juice, and pour it over the zucchini noodles.

  3. Season with a pinch of salt and pepper.

  4. Using two salad spoons, toss the noodles coating them evenly with the pesto dressing.

  5. Do a taste test and check if the flavours are balanced. For example, does it need a bit more basil pesto, more zing or salt? Adjust the flavours if needed.

  6. Add the finishing touches. Garnish with toasted pinenuts, feta and pea shoots.
