Use this recipe as an inspirational guideline. I invite you to get creative, experiment, try new ingredients and different combos. If you don't have/like something, swap it out with something else. Taste as you go along. Trust your tastebuds and your gut...and most importantly, have fun!

For those days you wake up and feel like you need a hug...this Baked Apple Oats is just the hug you need!


No one wants to start their day with complicating things, and that's why this throw-it-all-together-and-bake-it-breakfast is a winner!


It's packed with everything you need to start the day right. The best part is you can carry on getting ready for your day while it bakes in the oven! 


You can also save it for later or enjoy it for breakfast again the next day.


Enjoy it with some of your favourite oat toppings like vegan or Greek yoghurt, seeds, berries, banana, or sliced apple. 


If you want a bit more sweetness, drizzle a bit of maple syrup or honey over it.

BAKED APPLE OATS

Ingredients

2 cups Wholegrain Oats


1 cup Walnuts / chopped


2 tsp Cinnamon


1 tsp Nutmeg


1 tsp Baking Powder


1 Apple / cored and finely sliced


1 cup organic Apple Puree / or 2 - 3 mashed ripe Banana


500 ml (2 cups) Almond Milk


1 tsp Vanilla


a good pinch of Salt

BAKED APPLE OATS

Instructions

  1. Preheat the oven to 180°C

  2. Use an ovenproof dish, roughly 20cm x 25cm ( or 1 litre capacity ), and grease it lightly with some coconut oil.

  3. You can mix the ingredients in the ovenproof dish or a mixing bowl, up to you.

  4. Add all the dry ingredients ( oats, walnuts, cinnamon, nutmeg, baking powder, salt ) and mix them well together. 

  5. Add the chopped apples, keeping a bit aside for the topping.

  6. Add the almond milk, vanilla and apple puree ( or mashed banana ) and mix well.

  7. Pop it in the oven and bake for 30 minutes - set a timer.

  8. Once it's ready, serve it with your favourite oat toppings like yoghurt, seeds, berries or some fresh sliced apple.
