THIS IS MY VERSION OF PEAS + CARROTS / A DELICIOUS AND HEALTHY BALANCED MEAL / VEGAN

This is my version of the winning combo "Peas and Carrots". 


The Miso Maple Roasted Carrots are the star of the dish. It's served with bulgar wheat, crispy spicy chickpeas and a deliciously zingy pea hummus. All topped with some crunchy sugar snap peas and furikake. 


I know it looks like there are a lot of components to the dish, but it's all fairly straightforward:

  • the Pea Hummus can be made beforehand OR replaced with regular peas or mushy peas.

  • the Carrots and Chickpeas are roasted in the oven, easy peasy.

  • Bulgar wheat is quick and easy to cook. You can also use rice, quinoa or couscous.

Ingredients

Roasted Carrots / see RECIPE


Roasted Chickpeas / see RECIPE


Pea Hummus / see RECIPE


1 cup uncooked Bulgar Wheat / this is usually enough for 2 people


Sugar Snap Peas / finely sliced


Furikake or Sesame Seeds

Instructions

Preheat the oven to 180° and prepare the carrots and chickpeas following the recipe instructions.


While the carrots and chickpeas are in the oven, make the Pea Hummus following the recipe instructions. The hummus can be made in advance as well.


Prepare the Bulgar Wheat:

While the carrots and chickpeas are roasting, you can cook the Bulgar Wheat. First, prepare 1 cup of uncooked bulgar wheat following the cooking instructions on the packet. 


Finely chop the Sugar Snap Peas and keep to one side, ready for serving.


By now, the chickpeas and carrots should be done and you can start plating up all the components.


Finish with a sprinkle of sliced sugar snap peas and furikake (or sesame seeds).
