PEA & MINT ORZO SALAD

VEGETARIAN + GREEN GOODNESS

This is a great summer salad to make for barbeques and when you're entertaining friends. It's also a perfect lunch packed with greens and great for lunchboxes.

INGREDIENTS

  • 250g Orzo / cooked

  • 1 medium Red Onion / thinly sliced + sautéed

  • 1 cup Petit Pois Peas / cooked

  • roughly 300g Zucchini / chopped + sautéed

  • 100g Fine Green Beans / blanched

  • 1/3 cup Mint / finely chopped

  • 1/3 cup or 50g Pine Nuts / toasted

  • Feta / as much as you like

  • a big handful of Baby Spinach

DRESSING:

  • 1/3 cup Olive Oil

  • 1tsp Apple Cider Vinegar

  • 3tsp Dijon Mustard

  • juice from 2 Lemons

  • 1tsp Agave or Maple Syrup

  • 1 clove Garlic / minced

  • Mint

  • Salt
